Baking bread with patience, flour, and a Parisian heart.
Every dawn at BoulangerieAuthentique begins before the city stirs. We stoke the hearth, feed our heritage levain, and honor centuries of artisanal French bakery practice.
What started as a family reverence for honest, golden crusts has blossomed into our welcoming corner in the 1st arrondissement. No shortcuts, no pre-mixes—only time, heat, and devotion.
The rhythm of slow fermentation and hearth-baked crusts.
true French baking is not hurried. In our kitchen at 123 Rue de Paris, each batch of dough rests through a quiet, cold fermentation for over thirty-six hours. This deliberate pace allows natural yeasts to unlock complex wheaten aromas and produce the delicate, irregular air pockets cherished in classic artisan bread.
From hand-laminating buttery croissants each morning to scoring our signature baguettes with a swift baker's stroke (le coup de lame), our touch remains personal and tactile. We believe good bread gathers people, anchors neighborhood conversations, and elevates the everyday table.
“Bread is alive. It responds to the humidity in the room, the warmth of your hands, and the patience you give it. When a loaf crackles as it leaves the oven, it is singing its story.”
